Learning about objects by looking and manipulating

We learn about objects by manipulating them up and looking at them.  How can we create a robot that does something similar, pick up a thing it hasn’t seen before, in order to understand better its geometry, color, texture and other properties.  Examples include fruit and vegetables, manufactured objects or manipulate the leaves of a plant to see fruits or the stem structure.
